Healthy chocolate chip cookies incorporating coconut and nut ingredients.


Ingredients (makes 6 Regular sized cookies)

  • 1/4 Cup Coconut flour
  • 1/4 Cup LSA (Linseed, sunflower & almond meal mixture)
  • 1/2 Tbsp Cacao powder
  • 1/2 Tsp Baking soda
  • 1 Tsp Vanilla extract
  • 1 Egg
  • 2 Tbsp Butter or solid coconut oil

Method

  1. Pre-heat oven to 180°c Combine coconut flour, LSA, cacao powder and vanilla extract. Add butter, I use a spoon to squish it into the other ingredients until combined. Add dark choc chips and egg, mix until ingredients start coming together.
  2. Divide mixture on a tray lined with baking paper and cook at 160°c for around 8 minutes or until chocolate has visibly melted and the top of the cookies is just stiff. It won't take too long with coconut flour.

Notes

If you can't find or don't want to use LSA, then almond meal would work just fine. Add a little extra butter or coconut oil if needed.

  • Not really into coconut but this recipe sounds really healthy.
    Will have to try a different sort of flour and make this for my kids to try.

  • Just tried to bake this and used almond meal instead of LSA and added a bit of shredded coconut and choc chips. It really needed more sweetness like honey though because the texture was really dry and there really wasn’t much flavour.

    • Yes I noticed this as well. I used 1/4 cup raw choc nibs.
      I also added 1/4 cup dessicated coconut to the batter.
