A quick meatball recipe that’s our family favourite. The hidden veg is great, add more grated veg, or cook in a crushed tomato sauce
Use any mince, chicken, lamb or beef


Ingredients (serves 4)

  • 500g Mince
  • 1 Carrot, grated
  • Fresh herbs, chopped fine
  • 2 Eggs
  • 1 cup Baby spinach, chopped fine
  • 4 Garlic cloves, crushed

Method

  1. Mix all ingredients in a bowl thoroughly
  2. Roll into small balls
  3. Fry slowly until golden
  4. Serve with dipping sauce

  • This is a delicious sounding recipe, and so easy as well. There’s nothing like hiding a few healthy vegetables in some sort of mince.

  • I love how easy these seem but I would add even more veggies. I would add zucchini or even sweet potato. Delish!
