This is a healthier alternative to store-bought marshmallows. You could make it more fructose free by substituting the honey for rice malt syrup.

Ingredients (makes 30 marshmallows)

  • 3 tablespoons gelatine
  • 1 can coconut cream
  • 1/2 cup cream
  • 1/4 cup honey
  • 3 teaspoons of vanilla essence
  • 3 drops of beetroot juice (or red food colouring)

Method

  1. Dissolve the gelatine in 1/3 cup of cold water and let sit for 4-5 minutes.
  2. Heat the remaining ingredients (except for the beetroot juice or food colouring) in a small saucepan until almost boiling. Remove from heat and then puree smooth with a stick blender.
  3. Pour half of the mixture into a container and let set in the fridge for an hour. With the remainder of the mixture still in the pan, add the drops of beetroot juice or food colouring. Stir through and pour into a separate container and let set in the fridge for an hour.
  4. Once set, cut them into squares or chunks. Perfect for an afternoon snack.

Notes

Mix it up by using cookie cutters to cut out the marshmallows.

  • love his recipe!!! will have to try it, a much better and healthier version

    • Much healthier. Because these are made with coconut cream you can’t eat a whole stack of them as you’d just feel sick, they’re very rich; unlike the store bought version which I know I could eat a whole packet before feeling sick!

  • Sounds so yummy. And I have enjoyed reading other comments suggesting changes to the types of sweet substitutes and gelatine substitutes. Definitely going to try variations of this recipe.

  • I did not know honey lost its nutritional value when heated I am always looking out for healthy options. Sounds like a healthy snack for the entire family.

  • Nice recipe ! I wouldn’t use honey tough as honey looses it’s nutritional value when heated. Would rather use coconut palm syrup, date syrup or yacon syrup and add it when the rest is heated. Since I’m a vegetarian I would substitute the gelatine for agar-agar.
