A low fat, lower calorie and egg free version of banana bread.


Ingredients (makes 16 Slices)

  • 2 cups Plain wholemeal flour
  • 1/4 cup Brown sugar
  • 1 1/2 teaspoons Baking powder
  • 1 teaspoon Bicarbonate of soda
  • 1 teaspoon Cinnamon
  • 2 Bananas
  • 1/3 cup Honey
  • 1/4 cup Skim milk

Method

  1. In a large bowl mix the flour, baking powder, soda, brown sugar and cinnamon.
  2. In a separate bowl mash the banana well. Add the honey and milk and mix with the banana.
  3. Stir the banana mix into the flour mix until combined.
  4. Spread the mix into a loaf pan. Bake at 180 degrees for 40-50 minutes.

Notes

If I am making this for my daughter I add in some choc chips. Also really nice with some berries (blueberries, raspberries, strawberries) added in at the end.

  • This looks fantastic. Banana cake/bread muffins is a staple in our house so that the over ripe bananas dont ho to waste but I’m super keen to try this healthier version of it. Thanks so much for sharing this recipe with us. I will give it a go this weekend 🙂

  • The honey banana bread looks utterly delicious. I crave a piece now with my cup of coffee. The golden crust, speckled with banana, looks yum and flavorful. I would love a thick slice, perhaps toasted, with a smear of butter. The aroma alone must be heavenly when baking. Looking forward to trying this recipe.
