Ingredients (makes 10 )
- For dough:
- 125gm Butter
- 1.5 cup SR flour
- 1 egg
- 1/4 cup white sugar
- For fillings:
- 2 large eggs
- 1/2 cup boiling water
- 1/4 cup Sugar
- 1.4 T Vanilla essence
- 60mL Whole milk
Method
- To make dough: In a large bowl, melt butter in a microwave for about 30 seconds. Let cool and add sugar and egg. Mix well with a handwhisk.
- Add in flour and knead until dough forms. Divide dough into 10 portions and fold into a muffin tray. Use your fingers to press the dough into the tray to form a cup shape.
- For filling, pour boiling water onto sugar and stir. Let cool.
- Whisk in eggs,milk and vanilla essence. Pour mixture onto dough cups in the muffin tray.
- Bake tarts on 200C for about 20 minutes.
Notes
To ensure the egg fillings are done, insert a toothpick into the centre of the tart after 20 minutes. If the toothpick stays up, the egg filling is cooked.
