Ingredients (makes 10 )

  • For dough:
  • 125gm Butter
  • 1.5 cup SR flour
  • 1 egg
  • 1/4 cup white sugar
  • For fillings:
  • 2 large eggs
  • 1/2 cup boiling water
  • 1/4 cup Sugar
  • 1.4 T Vanilla essence
  • 60mL Whole milk

Method

  1. To make dough: In a large bowl, melt butter in a microwave for about 30 seconds. Let cool and add sugar and egg. Mix well with a handwhisk.
  2. Add in flour and knead until dough forms. Divide dough into 10 portions and fold into a muffin tray. Use your fingers to press the dough into the tray to form a cup shape.
  3. For filling, pour boiling water onto sugar and stir. Let cool.
  4. Whisk in eggs,milk and vanilla essence. Pour mixture onto dough cups in the muffin tray.
  5. Bake tarts on 200C for about 20 minutes.

Notes

To ensure the egg fillings are done, insert a toothpick into the centre of the tart after 20 minutes. If the toothpick stays up, the egg filling is cooked.
