Have a little fun with the toppings on your Quizza! If you don’t like Salmon, feel free to replace with almost anything. Treat a Quizza just like you would a pizza!

Ingredients (serves 4)

  • 3 sheets Puff Pastry
  • 6 Eggs
  • 1/2 cup Hot Smoked Salmon
  • 8 Cherry Tomatoes
  • 1/2 Red Onion, finely sliced
  • 1 cup Baby Spinach Leaves, fresh
  • 1 cup Grated Mozzarella Cheese
  • 1/4 cup Spring Onion, finely sliced
  • 1/2 tsp Salt and Pepper

Method

  1. Preheat oven to 175C (fan forced)
  2. Lightly spray a biscuit tray or line with baking paper. Lay defrosted sheets of puff pastry onto the tray allowing pastry to go slightly up the sides of the tray to form an edge or a lip around the edge. Press gently where the sheets join to create a seal.
  3. Sprinkle baby spinach, salmon, onion, spring onion and half the cheese evenly over the pastry base.
  4. Crack eggs one at a time and drop straight onto the pastry base - distributing the eggs evenly across the base.
  5. Top with remaining cheese, salt and pepper.

Notes

I always keep sheets of puff pastry in the freezer and we all love it. My kids aren't massive fans of really thick and creamy quiches but when served like this, they love it. I think it must be the ratio of pastry to egg that they like in our quizzas. I also like to call these quizzas because not only are they a cross between a quiche and a pizza, they are QUICK!

  • This is really good. I’ve made it a few times and it’s always a hit with my kids. I always make 2 batches – one with smoked salmon and i’ve made one with sliced salami. The kids love both ????

  • Thanks for this lovely dinner idea. It seems we can use what ever meat and vegetables in my kitchen. Just need to make sure they are thinly sliced.

  • Love the idea of this, salmon is not used much here. As you said treat it like pizza, so thinking a great way of using leftovers. Thank you for the idea for tea tonight , it is going to be small ones with different things.
