Get ready to discover the most delicious salad recipe ever! And we use the word ‘salad’ loosely, but it works, and it’s so good. This Italian Brown Rice Salad Recipe is filled with flavour and makes the perfect side, or even main. It’s hearty, and delicious and sure to be a firm family favourite.

Ingredients (serves 4)

  • 3 cups chicken stock
  • 2 teaspoons olive oil
  • 1 brown onion, chopped
  • 1 1/2 cups brown rice
  • 1 clove garlic, crushed
  • 1 teaspoon finely grated lime rind
  • 1/3 slivered almonds, toasted (in a frying pan until light brown)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup pitted olives, chopped
  • 1/2 cup fresh basil, torn
  • 2 tablespoons lime juice
  • 2 tablespoons white wine vinegar
  • 2 cloves garlic, crushed
  • 2 teaspoons dijon mustard

  1. In a large saucepan, heat the oil. Cook the onion until soft, and almost translucent. Add the brown rice, garlic and lime rind. Stir to coat.
  2. Add the chicken stock, and bring to the boil. Once boiling, reduce the heat. Turn down to a simmer, and cover. Cook for 50 minutes or until the rice is tender and the stock has been absorbed.
  3. In a small bowl, place the ingredients for the dressing; the lime juice, white wine vinegar, garlic cloves, and dijon mustard. Stir to combine.
  4. Add the remaining ingredients, along with the dressing to the rice and stir to combine. Transfer to a large serving platter or bowl and serve warm.

  • Going to print this out and make it Christmas day as the forecast is for 30 degrees so salad weather.

  • I think we’re going to have to try this one. Only ever made 1 fried rice in the past, this one looks more appetising then the one I made.

  • I will have to try this one. Thank you for sharing!

  • This sounds like an interesting take on my usual fried rice. Thanks for sharing

  • Much healthier version to my white rice. Will have to try. Thank you.

  • This is fab! Can’t wait to try it.

  • Yummo, sounds delicious. Love the how there is almonds in the salad too. Another to add to my list. Thankyou for sharing.

  • Not a fan of rice unless it’s fried rice. My kids do like rice so this brown rice looks like a good idea for dinner one night.

  • Am loving brown rice and am guessing the recipe might also work with quinoa too.

  • I love the look and sound of this dish but would it be the same without the lime? If I could find an alternative to using lime I’d certainly make it and serve it as a meal. Unfortunately being allergic to citrus is a big problem.

  • This looks delish! Can’t wait to try

  • It sounds a little like a risotto. My kids weren’t big fans of brown rice, last time I tried it on them. It might be time to try again :)

  • I love brown rice and love an easy recipe!

  • This sounds like a lovely side dish the whole family will enjoy & a healthier choice too!

  • this looks so delicious, thanks for sharing :-)
