You can use any type of jam. I prefer strawberry. It is a simple recipe, great for visitors or an afternoon snack


Ingredients (serves 8)

  • 12 sweet pastry tarts cases (frozen)
  • 1 cup coconut
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup strawberry jam

Method

  1. Mix coconut sugar and egg until well blended
  2. Put frozen tartlets on a biscuit tray uncooked. Spoon a teaspoon of jam into each one.
  3. Top each one with coconut mixture. Bake at 180 degrees until topping is golden and pie cases are cooked. let cool on tray.

  • I remember learning to make a slice like this in my first year of high school. These look a lot easier and probably yummier too 🙂

  • I used to make these all the time but I never get the frozen pie bottoms I think cheaper to make pastry yourself. Now I have to find my recipe to make as I used to like if visitors like. I’ve found people rather home cooked food.
