Ingredients (serves 12)

  • 80gm fresh kale (leaves only)
  • 3/4 cup coconut oil
  • 1.5 cup Almond milk or any milk of your choice
  • 1 cup honey
  • 3 teaspoon flaxseeds
  • 2 tsp vanilla essence
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 cup coconut flour
  • 3/4 cup cacao powder

Method

  1. In a blender, blend the first 8 ingredients until well combined.
  2. In a large bowl, mix coconut flour and cacao powder. Pour wet mixture on it. Combine well and pour batter in a baking pan.
  3. Bake for 15 minutes under 200C. serve when it is cool.

Notes

Very healthy chocolate brownie. You don't taste the kale at all!

  • I’ve not tried kale yet. I’ve had mixed reactions from family and friends. I think I’d need to try a sample of this before I’d attempt the recipe.

  • Beautiful ingredients, however baking with honey is not a healthy practice as it destroys all beautiful nutrients of the honey and what is left over is a liquid candy….
