Tastes like the real thing! A great treat for the family


Ingredients (serves 4)

  • 3 cups SR Flour
  • 1 Small carton Buttermilk
  • 4 Chicken Breast cut into large chunks
  • 2 tsp Paprika
  • 2 tsp Onion salt
  • 1 tsp Dried sage
  • 1 tsp Garlic powder
  • 1 tsp Oregano
  • 1 tsp Cayenne pepper
  • 1 tsp Cracked black pepper
  • 1 tsp Dried basil
  • oil For frying

Method

  1. Place the chicken in a container and cover with buttermilk. (Reserve at least 4 TBS)
  2. Marinate at least 3-4 hours or better still, overnight
  3. Mix the flour and the spices together with a fork
  4. Add 3 TBS of buttermilk and mix with a fork until flour has a clumpy breadcrumb texture.
  5. Remove chicken from the buttermilk and immediately place into the flour mixture
  6. Coat the chicken well on both sides
  7. Heat the oil to 170 degrees or until a small piece of bread bubbles when placed into the oil
  8. Fry until golden brown and cooked through (I always fry one piece to test it and get the cooking time right)

  • Thank you for this. should be a lot less oilier then KFC. Would be lovely to be able to enjoy chicken this way again. Though I will be using an air fryer as we do not dry fry in this house.
