An Aussie favourite.
Ingredients (makes 15 Lamingtons)
- 1/2 cup Butter
- 3 Eggs
- Pinch Salt
- 1 teaspoon Vanilla essence
- 3/4 cup Sugar
- 1 1/2 cups Self raising flour
- 1/2 cup Milk
- 2 cups Icing sugar
- 1 tablespoon Butter
- 1/3 cup Cocoa
- 1 teaspoon Vanilla essence
- 3 cups Coconut
- 4 tablespoons Boiling hot water
- 1/2 cup Milk
Method
- Turn oven to 180 degrees celcius.
- Cream the butter & sugar together for about 8 minutes. Then beat in eggs & vanilla, mix in flour & milk with the mixture.
- Pour the mixture into a greased square baking tray. Place in oven & bake for 30 minutes. Allow cake to cool. Once cooled cut into squares.
- To add the icing, add last 7 ingredients except for the coconut with boiling water in a bowl until it is quite thin. Coat the square pieces with the icing. Finally roll the lamingtons in coconut.
Notes
Great party food & especially good with a glass of milk.
