When life gives you lemons … make lemon butter !


Ingredients (makes 3 cups)

  • 4 Eggs - Beaten
  • 3/4 cups sugar
  • 1/2 cup Lemon juice
  • 1/4 cup water
  • 120 grams Butter
  • 2 teaspoons lemon rind - grated

Method

  1. Place beaten eggs and sugar in top of double saucepan. Stir until combined
  2. Gradually add lemon juice and water-stir
  3. Add Lemon rind and roughly chopped butter
  4. Place pan over simmering water
  5. Stir until mixture thickens.
  6. Pour into sterilized jars and seal

Notes

Delicious on toast or as a filling in cup cakes. Easy to make and keeps well in the pantry or the fridge once opened .

  • When you say keeps well how long will it keep? And shouldnt it be stored in the fridge only due to the butter and eggs?

  • My mum use daily to make lemon curd, which I loved and have made myself. Not sure if lemon butter is the same tho
