This Lime Chicken and Vegetable Rice Recipe is a quick, easy and tasty recipe for those who love chicken and rice. Perfect for lunch or dinner (and leftovers are great for work too)!

Ingredients (serves 2)

  • 1/2 cup Brown rice, uncooked
  • 1/2 Red capsicum
  • 1 Medium carrot
  • 1 Cup Snow Peas
  • Cooking oil spray
  • Salt
  • 380gms Chicken Breasts
  • 1 Tbsp Lime juice
  • 1 Small red chilli


  1. Cook rice
  2. Slice capsicum, carrot and snow peas. Add capsicum and carrot to frying pan with 2Tbsp of water. Cook over medium heat for 2 minutes
  3. Add snow peas and cook for a further 30 seconds. Stir vegetables into cooked rice
  4. Spray frying pan lightly with oil and heat. Slice chicken and add to pan
  5. Add lime juice, sliced chilli and a pinch of salt. Cook over high heat, stirring, until chicken is golden
  6. Serve chicken over veggie rice
