Mexican is great to enjoy all through the year, and one of celebrity chef Manu Fieldel’s favourite cuisines to cook with his family – so why not cook mum up a Mexican Fiesta this Mother’s Day?

Manu has shared his secret recipe for the best corn and avocado salsa ever, perfect to pair with chicken tacos or chicken burrito bowls – or get playful in the kitchen with your inner child (and any little ones) and try out Chicken Nugget Tacos.

 


Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon Mexican spice bland
  • 2 corn cobs, husks removed
  • Salt and pepper
  • 1 large avocado, coarsely chopped
  • 320-gram punnet Mix-A-Mato or cherry tomatoes, chopped
  • ½ cup small red onion, diced
  • ¼ cup chopped fresh coriander
  • 1 tablespoon lime juice

Method

  1. Heat a barbecue grill plate over high heat.
  2. Combine Mexican spice blend and half the oil in a bowl. Season with salt and pepper, then brush over corn.
  3. Cook corn on heated grill plate, turning occasionally for about 8-10 minutes, until charred. Remove and cool slightly.
  4. Cut kernels from cob.
  5. Combine corn with avocado, tomatoes, onion, coriander, lime juice and remaining oil.
  6. Season with salt and pepper and toss.

Delight the young and young at heart by serving up Mexican Chicken Nugget Tacos – cooking up Ingham’s AIRMAZING Chicken Breast Nuggets, and plating with mini tortillas, mayonnaise, lettuce, lime and chipotle.

  • Too much work for very little gain.
    A corn cob wrapped in paper towel, then gladwrap, small amount of water then poured into the top – microwave for 1 minute.
    Roll in butter and whatever spice you want.
    Voila.
    All done and very, very delicious

  • I absolutely love this and recently enjoyed a similar version on holiday in Thailand. I took a photo of the dish so I could make it at home!
