Bright, colourful and healthy a great addition to any BBQ!


Ingredients (makes 20 skewers)

  • 300g Inghams diced chicken
  • 1 Red onion, cut into chunks
  • 1 small Green capsicum, cut into chunks
  • 1 small Yellow capsicum, cut into chunks
  • 1 Punnet Cherry tomatoes, halved
  • 10 small Button mushrooms, halved
  • FOR THE MARINADE
  • 3 TBS BBQ sauce
  • 1 small Garlic clove crushed
  • 2 TBS Olive oil
  • 1 1/2 TBS Red wine
  • Salt & Pepper

Method

  1. Combine all ingredients for the marinade in a small bowl, and whisk together until completely combined
  2. Place the diced chicken into the marinade and stir to cover all the chicken. Put into the fridge for at least an hour. While that is marinading, make sure to soak your skewers in water to stop them from burning on the BBQ
  3. When ready to assemble, just start with one piece of vegetable, then a piece of chicken, a couple more pieces of vegetable, chicken and so on. Repeat with all veggies and chicken
  4. Lightly oil a BBQ hot plate, and place skewers on. Cook for approximately 15 minutes or until the chicken is completely cooked through. Serve immediately

Also nice cold the next day!
