Very mousse like dessert, sprinkle grated choc and serve with whipped cream

Ingredients (serves 4)

  • 1/2 Cup White Sugar
  • 1/3 Cup Cocoa Powder
  • 3 Tablespoons Cornflour
  • 2 Cups Milk
  • 2 teaspoons Vanilla Essence

Method

  1. In a microwave-safe bowl, whisk together the sugar, cocoa and cornflour. Whisk in the milk - a little at a time - so there are no lumps
  2. Cook for 3 minutes on high, Stir, then cook at 1 minute intervals, stirring between cooking times for 2 to 4 minutes, or until shiny and thick. Stir in vanilla.
  3. Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming, and chill in the refrigerator. Serve cold.

Notes

I love dressing this one up with mint leaves and grated white and dark chocolate

  • This looks great – I am always seraching for alternative desserts that are quick and only use stuff I already have in the cupboard.

I wonder if it would work without the cocoa and with more vanilla essence, as a vanilla pudding??

  • So it’s like a chocolate custard? I might try making this in individual cups (my kids love these treasures 🙂 ), may have to fiddle with the cooking time though.
