Ingredients (serves 6 | makes 24 mini rolls )

  • 500g Sausage mince
  • 200-400g Crushed pineapple
  • 2 Green apples
  • 2 Egg
  • 4-6 sheets Puff pastry
  • 1 cup Bread crumbs

Method

  1. Peel and grate apples.
  2. Combined grated apple, crushed pineapple, 1 egg and sausage mince into a large bowl and mix. (Clean Hands work best)
  3. As needed add small amounts of bread crumbs. This is to make the mince not too soggy. Place in fridge for 20 minutes.
  4. Cut pastry in half, place sausage mince along the long side not to thick. You should be able to roll completely so the pastry overlaps.
  5. Whisk 1 egg, using a brush lightly coat the top of the roll. Cut into desired sizes and place evenly spaced on to a tray lined with baking paper.
  6. Place in to oven on 180°, cooking time will depend on oven but 20-25 minutes is standard, checking twice and turn if needed to avoid the tops buring.
  7. Allow to cook and serve. These can also be frozen before cooked.

Notes

These are great for snacks or anytime, kids will love the fruity twist.

  • Sounds very different but I’m not sure my kids would eat hot fruit.

    • The best thing about these is unless you tell the kidies they will never know.

  • I thought this recipe was going to be a twist on the fruit mince pies. How wrong I was

  • Hey this is an interesting twist on a recipie! I love ham and pineapple pizza so I’m up for trying these. I will give it a go and serve with a chutney maybe for some spice!

  • Oh I am not convinced of this, especially still with the mince.

  • I’ve never read/heard of adding sweet ingredients to a savory sausage roll dish. Do they have a sweet taste?

    • It gives recipes a nice balance – hard to describe and really needs to be tried. Think of how pork and apple sauce taste together and turkey and cranberries – they all taste delicious.

      • Iyou really can only just taste the sweetness of the fruit, and can add as much or as little as you like.
