My mum used to bake this lemon meringue pie every Sunday as a treat after our baked dinner.


Ingredients (serves 8 | makes 1 Pie)

  • 1 can Nestle Condensed Milk
  • 1 sheet Shortcrust pastry
  • 1/2 cup Lemon juice and rind grated
  • 2 Egg yolks
  • 2 Egg whites for meringue

Method

  1. Preheat oven at 180 degrees (170 fan forced). Place pastry in greased pie dish and blind bake for 10 mins until almost cooked.
  2. Mix lemon juice, condensed milk, egg yolks and lemon rind until combined and pour into cooled pie shell.
  3. Whisk egg whites with small amount of caster sugar until firm peaks form. Spread over lemon filling and bake for around 30 mins, until filling is set and meringue is golden brown.

Notes

This recipe was originally my nanas then my mums, now I make whenever I can and the whole family love it.

  • I would like to try this recipe but you don’t say how much castor sugar to use. How much is “a small amount”? I hope this amendment can be published. It is the first easy recipe for lemon meringue pie I have ever come across.


    • Half a teaspoon usually does the trick, but if you want a sweeter meringue, maybe a teaspoon. Hope you like the finished pie.

  • Was all excited to make this and I was short by 1 egg! 🙁 will have to do it tomorrow instead! Looks great and didn’t realise how easy it was to make.


    • Yes it is easy. My parents used to make their own fantastic pastry, however I am just not that good at it, so frozen does me.
