Try it in a layered salad of cold boiled sliced potatoes, sliced red onion and tinned baby peas. mmmmm just like nanna makes.


Ingredients (makes 1 200 mls)

  • 1 egg
  • 3 Tbsp white sugar
  • 6 Tbsp Milk
  • 2 tsp dry mustard powder
  • 1 1/2 Tbsp White vinegar
  • 1 Tbsp butter
  • 1/2 tsp salt

Method

  1. In a jug, whisk the egg and sugar.
  2. Put it all in a small saucepan, with the butter and salt and heat over a medium-low heat, WHISKING CONSTANTLY, for about 2-3 minutes until it thickens. (it doesnt go as thick as store-bought mayo, maybe like...a thin custard?)
  3. Remove from heat and store in an airtight container in the fridge.
  4. Makes about 200mL.
