A healthy pikelet that contains the goodness of whole oat flour! A perfect breakfast for the cool days ahead.


Ingredients (makes 16 pikelets)

  • 100g Oat Flour
  • 100g SR Flour
  • 1/2 tsp Baking powder
  • 1 Tbsp Caster sugar
  • 1 cup Milk
  • 1 egg
  • 1 Tbsp Melted butter
  • Greek yoghurt, sliced strawberries and honey to serve

Method

  1. Sift the flours and baking powder into a medium bowl. Stir in the sugar.
  2. Pour the milk into a separate bowl or jug. Crack the egg into the milk and whisk until combined. Pour the milk mixture into the flour mixture, and whisk until smooth. Set batter aside for 5 minutes to allow the oat flour to soak up the liquid.
  3. Meanwhile, heat a non-stick frying pan over a medium heat. Brush some melted butter over the pan, and pour in the batter to make pikelets your desired size (I used approx. 2 T batter per pikelet). Cook until bubbles form on the surface and then flip and cook the other side. Repeat with remaining batter. Serve with greek yoghurt, sliced strawberries and a drizzle of honey.

Notes

I made my own oat flour using a high powered blender. You can do the same with a Thermomix, Vitamix, Breville Boss Blender etc. Just use traditional rolled oats and mill into a fine flour. If you don't have the tools to make your own oat flour, you can buy it from most health food shops.

  • These sound perfect, filling, and easy to make. I already love to have Greek yoghurt with blueberries or strawberries with my pancakes. Maybe somebody will make these for me this Sunday!!!
