Ingredients (serves 2)
- 500gm Carrots
- 1 large Brown onion
- 5 cloves Garlic
- Olive oil
- Pepper
- 1 cup Chicken stock
Method
- Preheat oven to 180C.
- Remove skin of garlic, slice carrot and onion. Arrange them on a baking tray and spray olive oil over generously. Bake for 20 minutes.
- Transfer everything into a pot and add in chicken stock. Simmer for 5 minutes and let it cool.
- Blend with a hand blender and serve with pepper.
Notes
A very creamy and free of milk or cream, rich soup. Hope you guys like it! It is crazy good! Really!
