Ingredients (serves 2)

  • 500gm Carrots
  • 1 large Brown onion
  • 5 cloves Garlic
  • Olive oil
  • Pepper
  • 1 cup Chicken stock

Method

  1. Preheat oven to 180C.
  2. Remove skin of garlic, slice carrot and onion. Arrange them on a baking tray and spray olive oil over generously. Bake for 20 minutes.
  3. Transfer everything into a pot and add in chicken stock. Simmer for 5 minutes and let it cool.
  4. Blend with a hand blender and serve with pepper.

Notes

A very creamy and free of milk or cream, rich soup. Hope you guys like it! It is crazy good! Really!

  • Sounds great, but if you wanted it to be creamier you could always use coconut cream.

  • This would be very hearty and warming on a cold Winter’s day. I’d love to add some swede and parsnip to it, and also a dash of tabasco sauce or chilli powder.

  • Love carrots because they really sweeten a dish. This soup would be really tasty with a dash of Tabasco sauce in it, for a little “bite”.
