My daughter turned 1 yesterday and I made this healthy smash cake for her to eat and smash and basically get messy.

Ingredients (serves 1)

  • 5 bananas
  • 1/2 cup Mango nectar
  • 1/4 cup rice bran oil
  • 1.5 cups Wholemeal SR flour
  • 250gm Cream cheese
  • 1/2 cup Blueberry puree
  • raisins to decorate

  1. Combine mashed banana, mango nectar, oil and flour in a large bowl and mix until very very well. Add cinnamon if desire.
  2. Bake in baking pan for 30 minutes on 350 degree. I bake mine in 2 small pyrex bowl and stack them together into a tall but mini cake.
  3. To make icing, beat the cream cheese and blueberry puree to form a pink icing. Spread on top of cooled cake
  4. You can decorate the cake with raisins or fruits. ANything you like.

  • Looks delicious and such a fun idea to create memories

  • Wow, such an interesting array of flavours with the blueberry, mango and banana!
Would love to see how this tastes as my kids love all of those fruits but I don’t think they’ve ever had them all together before.

  • This is such a good recipe. I’d like to try this with my kids too :)

  • Great recipe – thanks for sharing.

  • Great recipe. Thank you for sharing.

  • Great recipe, not just for 1yr olds I would say ! thanks for sharing !

  • Perfect for my bubs first birthday ????

  • Perfect timing as my son turns 1 in about 1.5 months!!

  • Why spoil the fun? It’s not like they eat much of it- birthdays don’t need to be healthy!

  • I like the idea. Thank you for sharing

  • Do smash cakes even get eaten? When did they become a thing? I’d not heard of them till a few years ago! Healthy options are always good, I think my kids will like it

  • A great alternative

  • Great idea!

  • My bubs first birthday was in iso so she missed out on a cake smash.
I did make her a cake though and it was so much more effort than this one, I’d welcome making this one as it seems much simpler and it’s only going to get destroyed.
    Thank you for sharing.

  • Bit too much effort for a smash cake. It’s not like it’s for eating, bub just smashes the bejeezus out it for photos
