Very easy and fast to make, these little appetisers will be a hit at your Christmas get together
Ingredients (makes 16 Squares)
- 2 Sheets Puff pastry, thawed
- 8 Cherry tomatoes, cut in half
- 1/2 cup Smooth Ricotta
- 1/4 cup Pesto (either fresh or jar is ok)
- Salt & pepper
- 1 Egg, beaten
- Italian herbs (dried)
Method
- Cut both sheets of pastry into 16 even small squares so you have a total of 32 squares. Then for 16 of those squares, cut a small square out of the middle of each piece
- Lay the whole squares on a baking tray that has been lined with baking paper, and place a square with the middle cut out of it on top of each of the whole squares to create a “wall’ around each one
- Mix the ricotta, pesto and salt and pepper together
- Brush each square with egg, then add a small dollop of ricotta mix in the middle of the pastry.
- Place a half of cherry tomato on top and sprinkle with Italian herbs
- Cook in a moderate oven (180 degrees) for 20 minutes or until golden and puffed up
- Serve warm or cold
Notes
You can switch these up by adding olives, yellow cherry tomatoes, basil etc. Have fun and play around!
