Goes great at BBQs. Freezes well for easy reheats mid week.
Ingredients (serves 6)
- 2kg Potatoes
- 200ml Thickened Cream
- 2 Chicken OXO cubes
- 1 large Onion
- 6 slices Middle Bacon
- 2 cups Shredded cheese (pizza mix is best)
Method
- Roughly chop bacon and fry until mostly crunchy then set aside on paper towel
- Slice onions and potatoes (use mandolin thick slice for more even cutting)
- Place a layer of potatoes then scatter onion and bacon before layering more potatoes, onion and bacon until finished
- Melt OXO cubes with a tablespoon or 2 of boiling water mix with cream and pour over potatoes
- Put into oven uncovered for approximately 45 mins at 170-180 degrees then spread a generous amount of cheese on top and cook until golden brown
Notes
This is a family favourite once you’ve made it you can adjust to your tastes. Leeks also work beautifully with this dish or add grated zucchini great for kids that don’t like veggies
