Great as a side dish or as a snack


Ingredients (makes 6 )

  • 2 cups pumpkin - cooked and mashed
  • 1/4 teas salt
  • 2 tbs flour
  • 1 egg, beaten
  • 1 teas baking powder
  • butter or oil
  • sugar mixed with ground cinnamon (1/4 cup sugar and 1 teaspoon cinnamon sugar)

Method

  1. Mix pumpkin, egg, flour, baking powder and salt together
  2. Heat butter in a frying pan and drop in spoonfuls of mixture.
  3. Fry on both sides until golden
  4. Sprinkle with cinnamon sugar Serve while hot

  • Oh these sound delightful.
    I need to remember this recipe when my pumpkins are plentiful.

  • My son loves fritters, hash-brown type things, but not so flash on pumpkin. This could be the ideal way for me to get him to eat it. Just call it pumpkin hash browns and he’ll be in!
