Great as a side dish or as a snack
Ingredients (makes 6 )
- 2 cups pumpkin - cooked and mashed
- 1/4 teas salt
- 2 tbs flour
- 1 egg, beaten
- 1 teas baking powder
- butter or oil
- sugar mixed with ground cinnamon (1/4 cup sugar and 1 teaspoon cinnamon sugar)
Method
- Mix pumpkin, egg, flour, baking powder and salt together
- Heat butter in a frying pan and drop in spoonfuls of mixture.
- Fry on both sides until golden
- Sprinkle with cinnamon sugar Serve while hot
