Great as a side dish or as a snack


Ingredients (makes 6 )

  • 2 cups pumpkin - cooked and mashed
  • 1/4 teas salt
  • 2 tbs flour
  • 1 egg, beaten
  • 1 teas baking powder
  • butter or oil
  • sugar mixed with ground cinnamon (1/4 cup sugar and 1 teaspoon cinnamon sugar)

Method

  1. Mix pumpkin, egg, flour, baking powder and salt together
  2. Heat butter in a frying pan and drop in spoonfuls of mixture.
  3. Fry on both sides until golden
  4. Sprinkle with cinnamon sugar Serve while hot

  • I love pumpkin and ive had pumpkin pie but other then that or pumpkin scones ive really not treated it as a sweet thing. These sound very interesting though and id love to try.
