Great as a side dish or as a snack


Ingredients (makes 6 )

  • 2 cups pumpkin - cooked and mashed
  • 1/4 teas salt
  • 2 tbs flour
  • 1 egg, beaten
  • 1 teas baking powder
  • butter or oil
  • sugar mixed with ground cinnamon (1/4 cup sugar and 1 teaspoon cinnamon sugar)

Method

  1. Mix pumpkin, egg, flour, baking powder and salt together
  2. Heat butter in a frying pan and drop in spoonfuls of mixture.
  3. Fry on both sides until golden
  4. Sprinkle with cinnamon sugar Serve while hot

  • I decided to grow some Butternut pumpkins this year and now we’ve got dozens of them. I’ve been looking for some different recipes to use them, and this looks seriously delicious. I’d love them with a little cheese in them. Yum.

  • make this for the little ones! Had 1 cup of pumpkin and had to use 3 tbs of flour as it was to runny. Didnt use cinnamon or sugar but my 9 month old loved them and so did I!
