The amount of creamy sherry you use will depend on your personal preference, I usually end up making two trifles; one for the kids and one strictly adults only!


Ingredients (serves 10)

  • 1ltr Custard
  • 2 Sponge cake bases
  • 500g fresh cherries
  • 2 cups creamy sherry
  • 2 pkts Jelly crystals
  • 1Tin Black cherries

Method

  1. Make Jelly according to directions on packet and add in the tin of black cherries, you can choose may flavour really but I tend to favour port wine and heat the juice to combine in with the boiling water!
  2. Once jelly is set gather all your ingredients, cut or tear sponge cake into bite sized cubes, I use store bought sponge cake and custard, of course you can make your own if you wish!
  3. Start by placing a layer of cake at the bottom of your dish, you can use a glass bowl or baking dish or even individual glasses if you like. I drizzle a little creamy sherry over every layer of cake.
  4. Add layers of jelly and custard between your cake layers making each as thick or thin as you like! I finish with a custard layer and top with some fresh cherries!

Notes

This is best made the night before, cover securely with glad wrap and serve cold!

  • I love triffle! This one sounds a lot like to one my grandma used to make the family when I was a child. I love Summer for the cherries and like that you’ve included both fresh and tinned in this recipe. I will definitely be giving these a go for my family, thanks for sharing!
