Take the humble cauli from a side dish to a marvellous hero with this delectable recipe from founder of Miso Tasty Bonnie Chung. It needs to be on your table … stat!

Roast Cauliflower With Spicy Miso Marinade Recipe

Miso is a Japanese paste made of fermented soybeans, and it packs an umami punch. It adds an extra-savoury dimension to soups, marinades and salad dressings.

But don’t just limit miso to mains… it works wonders in desserts too, adding a pleasing salty counterpoint to sweets.

Ingredients

  • 1 tbsp Miso Tasty red miso paste
  • 700 g cauliflower 1 head
  • 2 tbsp sesame oil
  • 1/2 tbsp Chinese chilli-garlic sauce
  • 1 tbsp root ginger peeled and finely grated
  • 1 tsp lime zest finely grated
  • 1 tsp lime juice
  • 2 spring onions (scallions) finely sliced
  • 2 tsp white and black sesame seeds toasted

Method

  1. Cut the leaves and stem off the cauliflower so that it sits flat, and wash the head then drain.
  2. In a small bowl, mix together the sesame and olive oils, the miso, chilli-garlic sauce, ginger and lime zest and juice until fully combined.
  3. Using your hands, rub the mix over the cauliflower, making sure you get it everywhere, even the base. Leave for 30 minutes.
  4. Preheat the oven to 160°C / 325°F / Gas mark 3.
  5. Put the cauliflower on a lined baking tray and roast for 1 hour.
  6. Remove the cauliflower from the oven and sprinkle the spring onions and toasted sesame seeds over.
  7. Slice the cauliflower at the table into wedges, as if cutting a cake. Enjoy!

  • Aw I love cauliflower and it’s regularly eaten here in various forms and dishes. I know cauliflower is hard to digest for some people. Vegetables like broccoli, Brussels sprouts, cabbage and cauliflower are high in sulfur and can cause bloating and gas. Luckily that’s not the case within our family, my kids love eating cauliflower too

  • I love roasted cauliflower, it is one of my favourite dishes. I have never been able to successfully cook it myself but i always order it when i go out for dinner and it is on the menu. This recipe looks simple enough, I might have to give it a try and see if this time i am successful in cooking this.

  • This looks delicious! I’ll be on the look out for the Miso Tasty brand at the shops. I have everything on hand right now (of other brands) and a huge cauliflower that I’ve been debating on what to use for, I think this will be it! Thanks for the yummy inspo
