Ingredients (serves 1 | makes 1 )

  • 1 - 2 sliced mushrooms
  • 1/2 small sliced tomato
  • 1 clove garlic (optional)
  • 50g - 100g cold shredded marinated roast chicken
  • 2 Tip Top Thins in Wholemeal
  • 40g feta cheese
  • a few basil leaves (to garnish)

Method

  1. Pan fry some mushrooms on medium heat (add crushed garlic clove or garlic butter - optional) for a couple of minutes.
  2. Once mushrooms are almost cooked, add your tomato and continue to fry for a another minute.
  3. Add roast chicken to the pan and toss through to warm the chicken.
  4. Place the pan fried ingredients on top of your Tip Top Thins, with fresh tomato, cheese and basil, top with your remaining Tip Top Thin and enjoy!

Notes

Extra filling ideas: lettuce, grilled sweet potato or baby spinach.

  • I will definitely have to give this one a go. I am not a huge fan of mushrooms, but I have very low iron and iron tablets do not agree with me, so I am trying to increase iron rich foods into my daily diet and this actually looks like it would taste really nice.

  • Looks yummy and I’m keen to try it with the extra filling ideas, some sweet potato is always welcome in a meal and I’ve been trying to get the kids more into eating spinach so this might be a nice meal to try gauge their interest again in it !

  • I have recently started to save myself time by pan frying extra chicken breast or thighs whenever I am cooking them for dinner so that I have some ready for lunches to use for a sandwich such as this which looks easy and deliciously fresh

  • Yum, this sandwich looks delicious! I really like sandwich thins because they are so light, they do the job and you don’t need to fill up on bread to have a tasty sandwich. Roast chicken is one of my favourite sandwich fillings and you can’t go wrong. This one in particular seems so easy to prepare.

  • This recipe would be good as a light dinner as well. It looks healthy and by using Tip Top Thins makes it a light meal. It could be a breakfast as well but use half the ingredients and only use 1 Tip Top Thin and maybe add a poached egg on top

  • Chicken and mushroom are two ingredients that taste so incredibly good together. I do love to eat chicken and mushrooms and this recipe is so delicious. The advantage of chicken and mushrooms on Thins is that the flavour of the chicken and mushrooms in not over taken by thick bread.
