A spicy winter warmer


Ingredients (serves 4)

  • 1/4 cup Oil
  • 1 med. Onion, chopped
  • 2 cloves Garlic, chopped
  • 4 cm piece Ginger, grated
  • 1/4 cup Red curry paste
  • 1.5 kg Butternut or jap pumpkin, cubed
  • 2 med Potatos, diced
  • 1 cup Coconut cream, plus extra to serve
  • 16 Green prawns
  • 1 Long red chili sliced
  • 1/2 bunch Coriander, chopped

Method

  1. Heat 2 the oil in pan ,add onion,garlic and ginger,cook for 5 minutes .Add curry paste and cook for further minute
  2. Stir in pumpkin and potatoes and season with salt and pepper. Cook,stirring often,for 5 minutes. Add3 cups of water and coconut cream and simmer for 20 minutes. Purée until smooth
  3. Heat remaining oil in large frying pan over medium heat. Add prawns,chili and coriander. Season with salt and pepper and cook for2-3 minutes,stirring occasionally or until golden
  4. Paddle into bowls. Serve with extra coconut cream and top with prawns

Notes

All credit to my daughter for this recipe. It's an easy winter warming recipe. The amount of chillies can be adjusted to suit personal taste

  • Love soup and love curry – so the perfect combination for me – curry soup. Pumpkin is a wonderful vegetable for soup too. This soup looks so tasty and good too!
