A tasty mexican chicken dish which the whole family is sure to love.
Ingredients (serves 2)
- 4 Chicken fillets
- 1 pack Taco seasoning mix
- 1 large jar Mild salsa sauce
- 2 cups Grated cheese
- 1 Onion diced
- 1 Red capsicum diced
- 1 cup Beans
- 1 cup Peas
- 1 tsp Turmeric powder
- 1 cup Rice
Method
- Preheat oven to 180 degrees celcius.
- Slice chicken fillets in half and coat with taco seasoning mix. Place in an oven safe dish and pour over contents of salsa with onion, capsicum, peas, beans and cheese.
- Place in oven and cook until chicken is tender.
- Meanwhile steam rice and add turmeric until rice is fluffy.
Notes
You can use other vegetables, e.g. green capsicum, zucchini, olives or whatever takes your fancy. This is a great way to use opened jars of salsa which need to be consumed within a few days.
