Delicious healthy sausage rolls
Ingredients (serves 12 | makes 24 )
- 500grms Sausage mince
- 500grms Beef mince
- 6 sheets Store bought puff pastry
- 1 glove of garlic Finally diced
- 1 small onion Finely diced
- 1 small zucchini Grated finely on the smallest grater
- 1 carrot Grated finely on the smallest grater
Method
- Grate and dice vegetables
- Add all vegetables and mince into a large bowl and mix together until completely combined
- Cut puff pastry sheets in half and add mixture to the middle of each half
- Using the beaten egg and pastry brush, brush the sides of the pastry and roll it up tightly
- Slice sausage rolls into half or quarters and brush the tops with the egg mixture, place on a tray lined with baking paper and bake at 180 Celsius for 20-25 mins
- If you dont want to cook them all immediately, do not cut them up or remove the plastic backing off the puff pastry but wrap it around once you've rolled them up, and store in a airtight container in the freezer. When you want a snack for the kids just put defrost and pop them in the oven.. They make great school lunches

This is a recipe I make for my son, he loves it and frequently take it for school lunches. They taste way better than shop bought sausage rolls and you can hide lots of veges in there
