This recipe works very well when you don’t know what do you want to cook or you don’t have in mind about what to cook or last minute guests arriving. You, your family and your guests will love this curry. Just add some hot steamed rice or any bread or the curry by itself is yummy.


Ingredients (serves 6)

  • 500 gms Peeled Boiled Potatoes
  • 1 cup chopped Tomatoes
  • 2 teaspoon Sugar
  • 2 teaspoon Salt
  • Half teaspoon Crushed Paprika or Cayenne
  • Half teaspoon Tumeric
  • 2 Cups Hot Water
  • 3 tablespoons Canola oil

Method

  1. Chop the mashed potatoes in small cubes
  2. In a deep frying pan heat oil
  3. Add chopped tomatoes, turmeric, salt, sugar, crushed paprika
  4. Saute the above for 3 - 4 minutes on medium flame
  5. Add potatoes and hot water
  6. Stir it gently and let it cook for 5 mins on high flame
  7. Serve it hot with steamed rice or any bread

Notes

Water, salt, sugar, paprika can be adjusted as per your taste and consistency required. Add some veggies or a meat if you like.
