a quick and easy variation of potato to enjoy with any meal


Ingredients (serves 4)

  • 10 chat potatoes
  • splash olive oil
  • sprinkle salt and cracked black pepper
  • 2 sprigs rosemary (optional)

Method

  1. Prick potatoes and microwave for 8 minutes , or mostly cooked
  2. Place in oven dish and squash potatoes with a fork or a potato masher
  3. Drizzle with olive oil and sprinkle with salt and pepper and Rosemary if desired
  4. Bake in hot oven (190-200) for 20 minutes or until golden

Notes

I have sprinkled these with either chilli flakes or paprika to spice things up a bit !

  • These potatoes looks so good. I have never microwaved my potatoes before but I am going to try this recipe method.
