Try this versatile spiced butter cake recipe – serve a piece plain for afternoon tea or jazz it up into a spectacular birthday cake!

Ingredients

  • 250g Butter, softened
  • 1 cup Caster Sugar
  • 3 eggs
  • 2 cups (300g) Self-Raising flour
  • 1/2 cup Milk
  • 1 tsp. Vanilla Extract
  • 1/2 tsp. ground Cinnamon
  • ¼ tsp. ground Ginger

Method

  1. In a mixer beat together the butter and sugar in a bowl until pale and creamy. Then whilst the mixer is still on add in the vanilla, cinnamon and ginger.
  2. Add the eggs, one at a time, beating well after each addition.
  3. Add in the mix alternating the flour and milk.
  4. Divide mixture evenly among the prepared pans and smooth the surface.
  5. Bake for 20-25 minutes or until a skewer inserted in the centres comes out clean.
  6. Remove from oven and cool in pan for before turning on rack to cool completely.
  • This looks easy to make and i will save this reciepe

  • definately would cut back on the sugar and i would use raw sugar. sounds like a real easy cake though i bet it would taste great if i used coconut flour 🙂

  • This is my end result, I think I left in oven for a bit too long however, feel it needs an extra 5 minutes. I had temp at 180 degrees although I had to guess & used a round cake pan. It was a tad dry, rather sweet but nice with a cup of tea. Ice cream or cream would jazz it up, pic attached. I had fun baking it though listening to music.
