This spiced quinoa is a great side which is quick to make and very tasty!
Ingredients (serves 4)
- 1 cup Quinoa (any colour)
- 1 can Corn
- 2 cups Broccoli
- 2 Tbsp Oil
- 1 Tbsp Cumin
- 1 Tbsp Turmeric
- 1 Tbsp Ginger
- 1 Clove Garlic
Method
- Put quinoa and 2 cups of water in a pot to boil, leave until all the water is gone. Put broccoli in a pot to boil.
- In a pan add oil, cumin, turmeric, ginger and garlic in a pan until fragrant, drain corn add to pan until slight brown. Then add broccoli mix, then add the quinoa.
- Mix one last time and serve with a steak, chicken or on its own.
