This spiced quinoa is a great side which is quick to make and very tasty!


Ingredients (serves 4)

  • 1 cup Quinoa (any colour)
  • 1 can Corn
  • 2 cups Broccoli
  • 2 Tbsp Oil
  • 1 Tbsp Cumin
  • 1 Tbsp Turmeric
  • 1 Tbsp Ginger
  • 1 Clove Garlic

Method

  1. Put quinoa and 2 cups of water in a pot to boil, leave until all the water is gone. Put broccoli in a pot to boil.
  2. In a pan add oil, cumin, turmeric, ginger and garlic in a pan until fragrant, drain corn add to pan until slight brown. Then add broccoli mix, then add the quinoa.
  3. Mix one last time and serve with a steak, chicken or on its own.
