Increase or decrease veggies as necessary. Easy to adjust cheese sauce to match amount if veggies. You could also place veggies in an oven safe dish, pour sauce over and sprinkle with extra grated cheese. Bake in hot oven til cheese is brown and melted

Ingredients (serves 1 | makes 2 Cups of sauce approx)

  • 1 pot Veggies of your choice
  • 1 Tblsp Butter or margerine
  • 1 tsp Crushed garlic
  • 1 Tblsp Plain flour
  • 1 cup Milk
  • 1 cup Grated cheese

Method

  1. Prepare veggies and place in steamer to cook
  2. While they're cooking, melt the butter and garlic in another pot. Cook 2 mins
  3. Stir in flour. Cook 2-3 mins
  4. Slowly add milk, whisking constantly to avoid lumps. Bring to a simmer and continue to whisk til sauce thickens
  5. Add cheese and stir through til melted. Put veggies on a plate, pour over sauce and eat

  • Yum love vegies in cheese sauce. Especially with nice corned beef!

  • Such an easy and adaptable recipe, to whatever veggies are in season, would make a filling meal with Wholemeal rolls.

  • If you are unable to get fresh cauliflower you can use frozen, the same with brocolli .
At the processing plant they are snap frozen. Often the “fresh” vegetables have been in coolrooms for weeks / months

  • The vegetables I will defintely put in this are cauliflower, pumpkin, spinach, and mushrooms which would go into the vegetable pot last as they cook so quickly . They are all great with cheese sauce.
