Tasty, healthy and great to serve with a fresh green salad. Can cook on bbq too if you like, top will just not brown up:)
Ingredients (serves 4)
- 8 large flat mushrooms
- 2 cups breadcrumbs - I crumb my old bread and always have in freezer
- 2/3 cup parmesan cheese, or cheese you prefer, finely grated
- to taste: dried oregano, marjoram, basil, tumeric, salt, pepper
- 4 rashers bacon, finely diced
- 1 brown onion, finely diced
- 2 tbs finely chopped fresh parsley
- 1 tsp crushed garlic
Method
- Remove stems from mushrooms. Place mushrooms on baking paper on an oven tray. Finely dice stems and set aside.
- Fry off the bacon and onion until onion is translucent, then add the garlic and cook for a minute, add the finely diced mushroom stems and cook for two minutes, set aside to cool slightly
- mix breadcrumbs, cheese, herbs and spices, and fresh parsley in a bowl, then add the bacon mix. Stir until all combined
- Stuff the mushrooms with the mix, pressing down lightly - easiest to do with your hands over the bowl of mix for each mushroom
- Cook in oven at 200 degrees for about 20 minutes, or 15 for a fan forced oven
