Tasty, healthy and great to serve with a fresh green salad. Can cook on bbq too if you like, top will just not brown up:)


Ingredients (serves 4)

  • 8 large flat mushrooms
  • 2 cups breadcrumbs - I crumb my old bread and always have in freezer
  • 2/3 cup parmesan cheese, or cheese you prefer, finely grated
  • to taste: dried oregano, marjoram, basil, tumeric, salt, pepper
  • 4 rashers bacon, finely diced
  • 1 brown onion, finely diced
  • 2 tbs finely chopped fresh parsley
  • 1 tsp crushed garlic

Method

  1. Remove stems from mushrooms. Place mushrooms on baking paper on an oven tray. Finely dice stems and set aside.
  2. Fry off the bacon and onion until onion is translucent, then add the garlic and cook for a minute, add the finely diced mushroom stems and cook for two minutes, set aside to cool slightly
  3. mix breadcrumbs, cheese, herbs and spices, and fresh parsley in a bowl, then add the bacon mix. Stir until all combined
  4. Stuff the mushrooms with the mix, pressing down lightly - easiest to do with your hands over the bowl of mix for each mushroom
  5. Cook in oven at 200 degrees for about 20 minutes, or 15 for a fan forced oven

  • Remove the pig and it sounds like a yummy meal indeed!
