Even if it’s summer, we love this dish made with brown rice!

Ingredients (serves 4)

  • 1 cup brown rice
  • 2 1/2 cups water
  • salt
  • olive oil
  • 2 eggs
  • 150 g diced ham
  • 100 g sliced mushrooms
  • 1/2 red capsicum, diced
  • 1/2 cup shredded cheese
  • 80 g Parmesan cheese, grated
  • 1 handful wholegrain breadcrumbs, plus some more for coating

Method

  1. Preheat oven at 180 degrees.
  2. Cook the brown rice in the water and some salt. (I pressure cooked it for 30 minutes in the All-in-One Cooker. If you cook it on the stove it will take slightly longer).
  3. In a pan slightly oiled, gently fry the mushrooms, capsicum and the ham.
  4. When the rice is cooked, mix it with the eggs and 40 grams of Parmesan cheese. (Leave the rest of the Parmesan cheese for later).
  5. Grease an oven casserole dish with olive oil and give it a coating of breadcrumbs.
  6. Pour half of the rice mixture into the dish. Press it down with your hands.
  7. On top of the rice place the mushrooms/ham mix, and the shredded cheese.
  8. Cover with the remaining rice.
  9. Sprinkle the top with the breadcrumbs and the remaining Parmesan cheese.
  10. Bake in hot oven for around 30 minutes. Enjoy!

  • Great recipe to have and make with my left over rice after a dinner party. I normally make Nasi Goreng but will make this recipe instead. Very simple and I am sure tasty as well.

  • And now for something completely different. I LOVE THIS IDEA. I cook my brown rice on top of the stove by the absorption method. It takes about 20 minutes tops.

  • I cook up brown rice. Stir in some spinach, cheese and eggs. Season, put in oven tray, top with cheese. Bake till browned. Yummo!

  • i have never made something like this before. i thought it was a rice bake but it is cake. that sounds really cool :) i would never have thought of this recipe. Does the breadcrumb topping go hard and crunchy or go more cake like?


    • The topping goes quite crunchy. If you prefer you could cover the top with aluminium foil during the last ten minutes.
