An easy and refreshing sorbet, perfect for the warm weather and full of flavour.


Ingredients (serves 4)

  • 2 Large mangoes
  • 440g Tinned pineapple pieces
  • 2 TBSP Pineapple juice
  • 2 TBSP Lemon juice
  • 2 TBSP Water
  • Strawberries to serve
  • Raspberries to serve

Method

  1. Cut the mango and place in a blender with the tinned pineapple pieces, two tablespoons of the pineapple juice (from the tinned pineapple), lemon juice and water in the blender and blend until smooth.
  2. Pour into a container and place in the freezer for four hours, stirring every so often.
  3. Serve with some raspberries and chopped up strawberries, or a fruit of your choice to garnish. Enjoy.

  • This looks and sounds so refreshing. I just love summer when the tropical and stone fruits are out. It wouldn’t be summer without them.
