A family favourite! You can use this recipe to make tacos, wraps or simply add this mixture to a bowl and add desired toppings.


Ingredients (serves 4)

  • 500g Lean beef mince
  • 1/2 Onion, diced
  • 1 clove Garlic, minced
  • 2 Carrots, finely grated
  • 1 or 2 Chillies
  • 1 can Refried beans
  • ~450g High-quality salsa
  • Taco shells
  • Assorted Toppings

Method

  1. In a large pan over medium-high heat, combine the beef and onion and cook until no pink remains, then add the carrot and cook for a minute or two. Add the garlic and cook, stirring frequently, for 1 minute.
  2. Use your Ansell food handling gloves to remove the seeds and finely chop the chilli.
  3. Stir in the chilli, refried beans and salsa. Cook until heated through and bubbling.

Notes

*I make my own salsa for this which also has chilli in it so adjust amount to suit your tastes. *For topping we use homemade Mexican rice, cheese, lettuce, tomato and avocado.

  • I now make taco filling from kidney beans, meat free. I slow cook a drained can of kidney beans with carrot, onion, garlic, celery, tomatoes, tomato paste, chilli, cumin and coriander. It’s so much better then the meat version
