A family favourite! You can use this recipe to make tacos, wraps or simply add this mixture to a bowl and add desired toppings.
Ingredients (serves 4)
- 500g Lean beef mince
- 1/2 Onion, diced
- 1 clove Garlic, minced
- 2 Carrots, finely grated
- 1 or 2 Chillies
- 1 can Refried beans
- ~450g High-quality salsa
- Taco shells
- Assorted Toppings
Method
- In a large pan over medium-high heat, combine the beef and onion and cook until no pink remains, then add the carrot and cook for a minute or two. Add the garlic and cook, stirring frequently, for 1 minute.
- Use your Ansell food handling gloves to remove the seeds and finely chop the chilli.
- Stir in the chilli, refried beans and salsa. Cook until heated through and bubbling.
Notes
*I make my own salsa for this which also has chilli in it so adjust amount to suit your tastes. *For topping we use homemade Mexican rice, cheese, lettuce, tomato and avocado.
