A great way to get lots of veggies into the kids and something different to put in the lunchbox instead of a sandwich.

Ingredients (makes 1 Large zucchini slice)

  • 5 Eggs
  • 1 cup SR flour, sifted
  • 375g Zucchini, grated and most moisture removed
  • 1 small Red onion, finely chopped
  • 200g Ham, chopped
  • 1 cup Tasty cheese, grated
  • 1/4 cup Vegetable oil

  1. Preheat oven to 170C. Beat the eggs in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine.
  2. Grease and line a 30 x 20cm lamington pan. Pour into the prepared pan and bake in oven for 30 minutes or until cooked through.
  3. Can be served warm or cold

This can be made ahead of time and keeps in the fridge for up to 5 days. Can also be frozen and taken out as needed. This can be made vegetarian by leaving out the ham. You can also add in any other veggies you like - it's a very versatile recipe

  • Thanks Kel this Zucchini Slice looks delicious and easy to make.

  • These looks soo yummy, I might add bacon to mine for a little something extra – thank you for sharing.

  • I should try this once, I would use a vegetarian substitute for the ham

  • Good to use up leftover veges. Thanks.

  • Zucchini slice is a great side dish. Thanks

  • Great recipe. I cant wait till all our summer zuccini start growing.

  • It’d be handy to keep some in the freezer for emergencies.

  • Love that this can be frozen. Great meal prep for snacks

  • Sounds nice and easy. I always have trouble finding a zucchini slice recipe you work. Squeezing out the zucchini as well gets all the juice it so the slice doesn’t get over wet.

  • Yum! I would totally add some more sneaky veggies

  • What a great sandwich alternative and you can load up with left over veggies

  • Yumm, Now that would be a great lunchbox recipe. Love it.

  • Healthy reciepe for kids.

  • I’m definitely going to make this. I’ve never been able to find my favourite zucchini cake recipe that is cooked in the microwave but this will make a fairly good substitute

  • I need to go and buy some zucchinis
