A great meal on a hot night, not too heavy but delicious and satisfying


Ingredients (serves 2)

  • 4 chicken thigh fillets,Cut into pieces
  • 1 lge knob ginger , peeled and thickly sliced
  • 2 cloves garlic, peeled and thickly sliced
  • 1 teaspoon chili flakes
  • 6 small potatoes, peeled and chopped into pieces
  • lettuce mix
  • 1 med capsicum, cut into strips
  • 1 small red onion , sliced thinly
  • small hanful coriander, roughly chopped ( more if desired )
  • DRESSING ( these measurements are approximate,Generally you can add more of anything to taste )
  • juice of 2 limes
  • 1/2 cup sweet chilli sauce
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 desert spoon brown sugar
  • salt to taste

Method

  1. Add a little oil and butter to pan and toss ginger and garlic slices until fragrant
  2. Add chicken pieces, season with salt and pepper and cook well .Remove the ginger and garlic sliced and discard. ( the garlic can be mashed a little and left in if desired ) Set aside to cool
  3. Boil potatoes in salted water until tender ( add a splash of white vinegar to stop potatoes falling apart ) drain and set aside
  4. Place lettuce, capsicum, onion, coriander to a large bowl. Add chicken and potatoes when cooled
  5. Adjust dressing to liking and pour over salad. Mix well

Notes

My husband and i sit down to a big bowl of this for tea on a hot night when we dont feel like anything too heavy. It hits the spot !
