Simple soup and healthy . I did not use chicken stock, but it can be used instead of water.


Ingredients (serves 3)

  • 2 Potatoes, peeled and cubed
  • 3 Soft tofu
  • 5 Fish balls
  • 2 Garlic, chopped
  • 1 tbs Vegetable oil
  • 1 tbs Salt
  • 1 Tomato, sliced
  • 600 ml Water (can subtitute with chicken stock)
  • 1 stalk Shallot, chopped
  • 2 stalk Coriander, chopped

Method

  1. Heat oil in the saucepan and add garlic, stir until fragrant. Add water and potatoes, boil until potatoes are tender.
  2. Add tomato, tofu and fish balls, continue to boil for about 5 minutes. Soup is ready to serve. Garnish with shallot and coriander on the top.

  • I am inclined to say that I don’t like tofu, but to be honest I don’t think I’ve ever tried it. I just dislike the idea of it! This is a nice simple recipe and sounds like a good way to try it out and see if I perhaps do like tofu.

  • Tofu – never had the pleasure, however I would make this, love the big chunks of potato.
