Yummy breakfast option


Ingredients (makes 4 servings)

  • 4 large tomatoes
  • 4 eggs
  • 8 tbls diced ham
  • 4 tbls grated cheese
  • cooking spray
  • salt

Method

  1. Preheat oven to 180 degrees. Lightly coat the bottom of a small baking dish with cooking spray and set aside.
  2. Cut off the top of the tomatoes and gently scoop out the flesh and seeds.
  3. Sprinkle the inside of each tomato cup with a small pinch of salt and add 2 tablespoons of diced ham to each.
  4. Crack egg into each tomato, sprinkle each with a little cheese and carefully place the filled tomatoes into the prepared baking dish. Bake for 20 minutes or so, longer if you like the yolk firmer.

  • Add a dash of tabasco sauce and a little chopped onion, and maybe even a splash of Worcestershire sauce, and I could eat a couple of these easily. Such an easy dish but very tasty and impressive, especially for a celebration brunch.
