This is a tasty and nutritionally very healthy recipe that is a great vegan main dish when served hot or excellent lunchbox snack when served cold.

Ingredients (makes 7 muffins)

  • 1 tsp minced garlic
  • 1 onion diced
  • 1 capsicum diced
  • 0.25 cup brocolli or spinach greens
  • 1.5 cups chickpea flour
  • 0.5 tsp cumin
  • 0.25 tsp paprika
  • 0.25 tsp ground black pepper
  • 1 tsp tumeric
  • 2 tsp yeast
  • 1,75 cups water
  • 0.25 cup fresh corriander

  1. Sauté the garlic, onion and capsicum, adding the greens and a dash of water to prevent any vegetables sticking
  2. In a bowl combine the dry ingredients chickpea flour, cumin, paprika, pepper, tumeric and yeast stirring well.
  3. Add the water and vegetables to the dry ingredients and stir until well combined, then stir in the fresh coriander
  4. Pour batter into greased muffin pans and bake for 20-25mins in an oven heated to 180C

While a little unusual, chickpea flour can be purchased in mainstream supermarkets and is packed with plant-based protein making it an excellent ingredient.

  • Chickpea in cooking is becoming more mainstream

  • Not something I would usually make but my vegan friends would love this

  • I might addrice instead of chickpeasr

  • Nice one. I always have chickpea flour and lentil flour at home, use it a lot.

  • First time I have heard of chickpea flour. Will have to try your recipe. Thanks.

  • I’ve never cooked.with chickpea flour. I’d be interested to give it a go.

  • Like besan/chick pea flour you can use lentil flour very well too. Like chick-pea flour it is high in protein. I use it in many things I bake (pancakes, cookies, cakes, bread) and it’s just another veggie serving. Woolworths has lentil flour in their isle with flours.

  • With the price of meat and not knowing what is fed to them. This is a great one to have and uses things from the garden,

  • Awesome to see a wonderful recipe with ingredients I grow in my garden, and that will be good for me..

  • So very nice to see someone actually submitting a really interesting Vegan recipe, More people should try to eat and live a plant based diet, good for ur health and also and more importantly, for our Animal friends.

  • Wow, different. Been wondering how to work chickpeas and lentils into my diet. thanks.
