A light cake with delicate lemon flavour and tart glaze. Perfect for morning or afternoon tea, or a grandfather who loves Madeira cake.
Ingredients (serves 12)
- 2¼ Cups Plain Flour
- 1 Cup Caster Sugar
- 1 teaspoon Baking Powder
- 1 teaspoon Bicarb Soda
- 1 Cup Water
- 6½ Tablespoons Oil (Canola, Sunflower, Vegetable)
- 1 Lemon, zested and juiced
- 1 Lime, juiced
- ¾ Cup Soft Icing Sugar
Method
- Preheat oven to 180°C or 160°C for fan force.
- Grease and line 20 X 20 cm square pan.
- Mix flour, sugar, baking powder, and bicarb soda together.
- Mix water, oil, lemon zest, and lemon juice together.
- Mix wet ingredients with dry ingredients and stir to combine.
- Pour into prepared tray and bake for 30 - 35 minutes.
- Cool for 10 minutes.
- To prepare glaze: Mix lime juice into the icing sugar to taste and spread over the cooled cake.
Notes
I adapted this from A Big Man's World Lemon Loaf because the result was dense and heavy. A full lime's worth of juice makes a very tart glaze. You can also make the glaze with 1-2 tablespoons of extra lemon juice, milk, or plain water with a dash of vanilla extract. Mix up the flavours by using lemon and lime juice in the cake, or try a different citrus fruit.
