Such an easy salad and although there is only one colour it is still so delicious and full of great nutrients.


Ingredients (serves 3)

  • 350g Lettuce leaves of your choice.
  • 2 Spring onions thinly sliced.
  • 1 Avocado peeled and diced
  • 1 1/2 tablespoons of lemon juice
  • 2 teaspoons of extra virgin olive oil
  • 1 teaspoon of Dijon mustard
  • Salt to season

Method

  1. Combine the lemon juice, oil, mustard and a pinch of salt in a large bowl, whisk ingredients together
  2. Add lettuce, spring onions and avocado and toss well to combine.

  • That is very green! Could add some cucumber too 🙂
