This is an adaptation of our ‘chicken stew’ recipe that uses white beans (and chickpeas) for protein instead of the chicken. Serve with some potatoes and greens!


Ingredients (serves 2)

  • 1 clove chopped garlic
  • 0.5 chopped onion
  • 0.25 cup cooked chickpeas
  • 0.5 cup cooked white beans
  • 0.25 cup cooked chopped carrot
  • 0.25up peas
  • 1 tbl milk
  • 0.25 tsp vegetable stock powder
  • 0.5 tsp ground tumeric
  • to taste cracked pepper

Method

  1. Fry the chopped garlic and onion until soft
  2. Add the chickpea, beans, carrot and peas with the milk and turn heat down
  3. Add the stock powder, tumeric and cracked pepper and gently warm through

  • This white bean stew looks delicious, I’d love to try making it , as I like the mix of creamy white beans, chickpeas and carrots. It seems like a cozy nourishing dish i would enjoy on a cool evening with some crusty bread on the side, and with a sprinkle of fresh herbs. Yum.
