This is an adaptation of our ‘chicken stew’ recipe that uses white beans (and chickpeas) for protein instead of the chicken. Serve with some potatoes and greens!
Ingredients (serves 2)
- 1 clove chopped garlic
- 0.5 chopped onion
- 0.25 cup cooked chickpeas
- 0.5 cup cooked white beans
- 0.25 cup cooked chopped carrot
- 0.25up peas
- 1 tbl milk
- 0.25 tsp vegetable stock powder
- 0.5 tsp ground tumeric
- to taste cracked pepper
Method
- Fry the chopped garlic and onion until soft
- Add the chickpea, beans, carrot and peas with the milk and turn heat down
- Add the stock powder, tumeric and cracked pepper and gently warm through
